At Hotel Freisleben, we combine Tyrolean tradition with culinary creativity. In our kitchen, father Norbert and daughter Nathalie conjure up special taste experiences with passion, imagination and craftsmanship – inspired by the Alps, but also by international flavors. This is how regional dishes meet new ideas, tried and tested dishes meet surprising compositions.

Local treasures & homemade food

The best often grows right on our doorstep

Many of the ingredients used are carefully collected, processed and used creatively in our kitchen – sometimes as a fine breakfast buffet, sometimes in a lovingly prepared 4-course evening menu.

Jams and syrups are made in summer, often handmade by our boss Daniela, with fruit from our own cultivation. = she meant this paragraph in orange

We source many of our products from long-standing partners in the region:

  1. Tender Highland beef comes from the Arlberger Highlandbeef of the Andreas Matt family in Flirsch.
  2. Chicken is supplied by the Lucas Keiler family from HÜHNER.GUT in Höchst, while veal and lamb come from Dommi’s small farm run by the Falch family in Flirsch.
  3. Our potatoes and fresh char come from the Leneler farm run by the Gabl family in Pitztal, and the finest eggs come from the Matt family in Pettneu am Arlberg.
  4. We obtain our cheese specialties from the Alpe Lawens, family Babsi & Andi Schuchter from Tösens.
  5. Honey and honey products are supplied by the Tschiderer mountain apiary in Pettneu.
  6. The muesli and polenta come from Dietrichs Kostbarkeiten in Lauterach.
  7. We get game meat directly from the forests around St. Anton from the Arlberg hunting cooperative.
  8. And since the early days of Freisleben, we have relied on the Martin Beermeister butcher’s shop in Innsbruck – a partner we have counted on for decades.

We are proud of these regional partnerships. They make our cuisine so special, strengthen local agriculture and guarantee enjoyment with a clear conscience.
